Myrtis' Fabulous Pecan Pie

What is more delicious than a piece of really good pecan pie - still warm - with a scoop of vanilla ice cream? Yum, yum! And my dear friend, Myrtis Allen, had the best recipe I have ever tasted.

Myrtis was a typical southern lady and a really good cook. She loved to have guests come in. She could discuss politics, sports, fashions, and religion and never failed to let you know how right her opinions were. I loved her and I really miss her.

Here is her really good pecan pie recipe:

Ingredients

  • 3 well-beaten eggs
  • ¼ cup melted butter
  • 1 cup dark corn syrup
  • ½ cup sugar
  • ½ tsp. cinnamon
  • 1 tsp. vanilla extract
  • 1 tbsp. flour
  • ½ tsp. salt
  • 1 cup chopped pecans

 

Directions

Sift dry ingredients.  Add melted butter, syrup and vanilla to eggs.  Add dry ingredients and nuts.  Bake in unbaked pie shell @ 350 deg. 45 min.
